Bruschetta Salad
Recipe
- 6 Roma Tomatoes
- 2 Garlic heads
- 2 tablespoons Olive Oil
- 2 Tablespoons Balsamic Vinegar
- Salt to taste
- 12 Basil leaves
- Baby Mozzarella cheese
- Arugula
⇸Preparation:
This salad is inspired by a simple Bruschetta recipe. You can make the bruschetta and serve it by itself. It's a very tasty dish (and light)!It can also be served as an appetizer!
A few things before I start explaining how to make this awesome salad:)
- The salad is enough for about 4 people, depending on the appetite
- You can add more or less Basil, I'm obsessed with my plant, so I love to go over board with the basil, but that's at your discretion.
Ok, Let's get cracking!
First of all... Mince or chop the garlic finely and then cube the tomatoes in small squares. Add both ingredients to a mixing bowl and set it aside.
Next step is to cut the basil.
Place one basil leaf inside the other, and continue to do this till all the leaves are inside of each other. Roll them length wise and then chop them. Add the leaves to the mixing bowl, so the salad can catch some taste and place it aside again.
Third step:
Add 2 tablespoons of olive oil to the mixture, then the salt and balsamic.
The last thing I add is the mozzarella. I like to keep the mozzarella clean for presentation so I leave it for last.
VOILA!
You have your bruschetta ready!
Optional step:
After you have finished all these steps, make a bed of arugula and drizzle the left over 2 spoons of Olive oil, and add a little salt. Place the Bruschetta mixture on top and serve as a salad!
