Blue Cheese and Walnuts Appetizer

Ingredients:
  • 4oz Blue Cheese
  • 3 tablespoons Honey 
  • Candied Walnuts
    • 4oz walnuts
    • 1/8 teaspoon salt
    • 2/4 cups powder sugar

The quality of your ingredients, matter. Choose wisely when handling cheese!

For your blue cheese, I used Blue D'Auvergne, but you can use Stilton (which I actually prefer, but the store did not have it in stock) or a strong and salty blue cheese. You need to contrast the flavors, so it is imperative that you choose a really yummy cheese.

Sweet like honey:) 
Acacia honey is my favorite kind of honey, for those of you who didn't know before, there are indeed different varieties of honey. Acacia comes from the black lotus tree, native from North America. This honey is suuuuuper sweet, and it's actually low on sucrose! If you have not had a chance, stop by your local cheese shop and see if they have some on stock.

Preparation:

Two words....
Candied Walnuts! YUUUUUMM

First step is to preheat the oven at 350F, and set up a lined baking sheet.

While the oven is getting hot, you need to blanch the walnuts. This step requires you to fill a tall pan with water, enough to cover the walnuts. Once the water reaches boiling point, add the walnuts and leave them in for 3 minutes.

When you take them out, pat them dry and immediately roll them in sugar and the salt.
For some more taste, you can add some cinnamon, I would suggest 1/8 tablespoon of cinnamon. 

Once they are covered in the mixture, place them in the lined baking sheet and bake for around 15 minutes. Check regularly on them, sugar burns very easily. Make sure to turn them around every 5 minutes. Once they come out, leave them to cool while you work on the cheese.

I took pictures of the cheese in its natural shape, and you can serve it this way, but it also tastes AMAZING when you crumble the blue cheese and mix it all together. 
It is your choice how you would like to present it. OHH! Also, since I'm at it, you can also add some dried cranberries for color and taste. I usually add them because they taste great, but I didn't have them on hand.

Assembly:
Leave the cheese whole or crumble, add the cool walnuts (chop the walnuts into smaller pieces), top it off with honey and serve! 

This makes it a perfect Thanksgiving appetizer!
